Introducing the Erewhon Coconut Cloud Smoothie, a delicious and nutritious blend that embodies the essence of tropical paradise. This smoothie, celebrated for its rich coconut flavor and vibrant blue color, not only relights the palate but also offers numerous health benefits. Packed with healthy fats from coconut milk, it supports heart health and provides sustained energy; adding fruits contributes essential vitamins and antioxidants.
Erewhon has gained a reputation for its high-quality ingredients, but many view its pricing as controversial, with accusations of price gouging. The ingredients used in their smoothies often verge on the borderline of nausea, with claims of health benefits that are not always scientifically validated. This smoothie contains blue majik/spirulina, which is an all-natural dye that adds that pretty blue color to the drink. However, it does contain a small dosage of cyanide, making it unsuitable for regular consumption, particularly for those with autoimmune disorders, as it can potentially exacerbate symptoms.
Additionally, there have been many complaints about this health food additive, saying that it has a ‘fishy’ flavor. This smoothie, however, uses many overpowering flavors like coconut, almond butter and banana to cover up this taste. If you would like to avoid a decent-sized crater in your wallet, feel free to use a food-safe blue dye in your smoothie as a substitute. Note that your tongue may be stained blue for a bit, but this alternative may be more realistic.
Let’s dive into how to whip up this invigorating Coconut Cloud Smoothie at home, allowing you to enjoy a healthful treat on your own terms!
x1 serving
Prep. time – 5 minutes
Total time – 5 minutes
Ingredients:
2 tablespoons coconut cream (coconut yogurt as a substitute)
¾ cup almond milk or other non-dairy milk
½ frozen banana
2 teaspoons almond butter
¼ cup frozen pineapple
1 teaspoon vanilla
½ frozen avocado
1 teaspoon blue majik spirulina (plus extra for the aesthetic) OR 2 drops of blue, food-safe dye
1 teaspoon stevia (authentic maple syrup as a substitute)
Equipment:
(1) Measuring cups
(2) Spoon(s)
(3) Blender
First, grab a large, clear glass of your choice, preferably one that is visually aesthetic. Using a spoon, paint some globs of yogurt – not too much, you’ll use the rest for topping – on the interior wall of your glass into randomized shapes intended to resemble clouds. Splash a pinch of blue majik/blue spirulina on the sides of the cup for some flare and set aside. If you don’t have blue majik/blue spirulina, you can mix your blue, food-safe dye with your coconut yogurt and paint it the same way.
Then, plug in your blender and add the milk, avocado, banana, pineapple, almond butter, vanilla, one teaspoon of blue majik/blue spirulina, and the sweetener of your choice. Mix at high speed until it is very smooth, and watch the sapphire blue color disperse into your soon-to-be drink.
Here comes the fun part: Pour the smoothie into the prepared glass, then top with the remaining coconut yogurt and another sprinkle of blue majik/blue spirulina for artistic measure.
This is an optional step, but take the time to take a picture of your masterpiece.
