Fall is upon the United States, and with fall comes traditional and seasonal tasty recipes. One of the many treats people enjoy is delicious pumpkin muffins. These muffins are not only easy to make, but they are also the perfect autumn snack. Better yet, this recipe doesn’t require a mixer. There are many possible variations to this recipe, however. It is up to bakers to decide whether to strictly follow the recipe or personalize it by adding chocolate chips, walnuts, and other additions that enhance the flavor.
For this recipe, bakers will need:
2 bowls
A whisk
A muffin pan
A rubber spatula
Ingredients and measurements:
1 and 3/4 cups all-purpose flour
1 teaspoon baking soda
1 and 1/2 teaspoons ground cinnamon
1 and 1/2 teaspoons pumpkin pie spice
1/4 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup vegetable oil or melted coconut oil
1/2 cup granulated sugar
1/2 cup packed light or dark brown sugar
1 and 1/2 cups canned pumpkin puree (not pie filling)
2 large eggs
1/4 cup milk (dairy or non-dairy)
Chocolate chips (optional)
Cinnamon (optional)
Walnuts (optional)
Instructions:
Preheat oven to 425°F and line muffin pan with paper liners.
Combine the dry ingredients in a large mixing bowl. Whisk together baking soda, flour, cinnamon, pumpkin pie spice, ginger and salt, and set aside.
Combine the wet ingredients in a separate medium bowl. Whisk the vegetable oil, granulated sugar and brown sugar together until it is well combined. Whisk in the eggs, pumpkin puree and milk until the texture is smooth.
Combine the wet and dry ingredients. Pour the dry ingredients into the bowl with the wet ingredients and stir them together gently with a rubber spatula. Make sure not to overmix. Once complete, the mixture should appear slightly lumpy. This is the time to add any extra toppings, such as chocolate chips.
Fill the muffin tin. Pour in the mixture until the tin is almost full.
Bake the muffins for 5 minutes at 425°F, then reduce the temperature to 350°F and bake for 15-19 minutes.
Cool. Once completely baked, take the tray out and let it cool for 5-10 minutes before transferring it to a cooling rack.
